Description
Moribashi are the specialized chopsticks Japanese chefs use to plate sashimi, arrange garnishes, and compose small dishes with precision. Kanaguchi Manufacturing has made moribashi in Miki City, Hyogo Prefecture since 1929, and remains the only producer in Japan to handle the entire process in-house, from forging the metal tips to shaping the wooden handles.
The handle of these moribashi is turned from ebony, a dense hardwood with a tight, lustrous grain that deepens with polishing. The hexagonal profile prevents rolling on the work surface and allows for precise repositioning between fingers during plating. The tip is heat-treated stainless steel, joined to the handle by a stainless steel collar.
